Shrimp Dogs

I don't have the full recipe, but one of my family's tailgate dishes is called Shrimp Dogs. According to family legend, back in the early days of tailgating, my grandpa and his buddies would divvy up the food responsibilities, and for one game, the guy who was supposed to bring shrimp for the shrimp cocktail forgot the shrimp, so Grandpa fried some cut-up hot dogs in butter and seasonings and served them with the cocktail sauce, and Shrimp Dogs have been on the menu ever since!

I'm thinking about making some easy slider sandwiches to share. Grab a pack of bread rolls, slice 'em open, and pile the insides with lunchmeat and cheese; top the buns with some melted butter and preferred seasoning, and toast them in the oven for a few minutes to get some melty goodness! 

Winning Guacamole Contest Recipe

(Contest was held among Funko Creative Services employees at Everett HQ in the summer of 2022)

4 avocados

1 jalapeño

½ Fresno pepper

½ white onion

1 heirloom tomato

1 clove of garlic

½ cup of lime juice

chopped cilantro

salt

ground cumin

Method:

Mash the avocados and mix in the rest of the ingredients, with salt, cumin, and cilantro to taste.

Citrus Punch

5 cups of cold water

46 ounces of canned pineapple juice, chilled

12 ounces of orange juice concentrate (partially thawed)

12 ounces of lemonade concentrate (partially thawed)

12 ounces of limeade concentrate (partially thawed)

1-liter bottle of club soda

Method:

Place all the ingredients into a large punch bowl (except the club soda) and mix. Just before serving, add the club soda. (Note: This punch tastes great with any and all cookies! It’s also fun to use different ice shapes to keep it cold—or fruit juice ice to refresh the punch throughout the party.)

Black Bean Salad (or Dip)

--Two cans of black beans (15.5 ounces each), drained and rinsed

--2 cartons of grape or cherry tomatoes, chopped

--2-3 cloves of garlic

--1 jalapeño, chopped

--1/4 of an onion (white or yellow), chopped

--1/2 cup of cilantro, chopped

--1 teaspoon of cumin

--1/4 teaspoon of salt (add more to taste, if needed)

--1/4 of a teaspoon of granulated sugar

--2 tablespoons of balsamic vinegar

Method:

Place all ingredients into a bowl and mix them together. Serve with chips—or as a side salad/dish.

Butterscotch Cookies

(Preheat the oven to 375°)

2 ¼ cups of flour

1 tsp of baking soda

¼ teaspoon of salt

1 cup of butter

¾ cup of brown sugar

2 tsp of butterscotch extract or liquor

1 egg

1 package of butterscotch-flavored chips/morsels

Method:

Combine the flour, salt, and baking soda in one bowl. In another bowl, cream the butter and sugar. Add in the egg and butterscotch morsels. Gradually add the dry ingredients into the wet ingredients, stirring together until well blended. Drop by spoonfuls onto a baking sheet and bake for 8-10 minutes.
